Kathirynne's Cooking School - Lesson #2

After promising to post a recipe each week, I promptly forgot to post one last week....

As an act of contrition, I present the following two waffle recipes.  I first found them in Vegan With A Vengeance, and tweaked them to our tastes.  They are just the thing for cold winter week end mornings.


Ginger-Pear Waffles (vegan)
2 c flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
1/2 tsp cinnamon
1/4 tsp allspice
1/4 tsp nutmeg
3/4 c apple juice
1/2 c milk
1 c pureed pears
2 Tbs oil
4 Tbs sugar
2 tsp vanilla
1 slightly under ripe pear, grated

Preheat waffle iron.  Combine first 8 ingredients in a large bowl.  Combine next 6 ingredients in another bowl.  Add to flour mixture and stir until just combined.  Drop batter 1 1/2 cups at a time onto hot, greased waffle iron.  Cook until golden brown.  Serve hot.


Apple Waffles (vegan)
2 c flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 Tbs cinnamon
1/4 tsp allspice
1/8 tsp ground cloves
1/8 tsp ground ginger
1/8 tsp cardamom
4 Tbs sugar
1 c apple juice
3/4 c soymilk
2 Tbs oil
1/3 c applesauce
1 Tbs vanilla
1 1/2 c chopped apple

Preheat waffle iron.  Combine dry ingredients.  Combine liquid ingredients and add to flour mixture.  Stir till combined and fold in apples.  Drop batter 1 1/2 cups at a time onto hot, greased waffle iron.  Cook until golden brown.  Serve hot.

We had an accidental that might be good with the waffles...made a syrup with sugar and water on the stove till it reduces thick, added lemon juice and ginger and a cinn. stick. I think it would be good to make the syrup with a juice in place of the water, too. We put the extra in a bottle, very pretty...(have had to hide it)
