Kathirynne's Cooking School - Lesson #3

This week's recipe is easy, inexpensive, delicious and makes a fantastic gift (maybe for Valentine's Day?)

Foolproof Chocolate Fudge

1 Tbs butter or margerine
1 bag chocolate chips, the nicest you can afford (especially if the fudge is for a gift)
1 tin sweetened condensed milk (NOT evaporated milk!!)
1/2 cup nuts (optional)

Prepare a 9x13 pan by spreading the butter on a piece of waxed paper that is large enough to line the bottom of the pan and hang out over each end.

Melt chocolate chips in a CrockPot over LOW heat, stirring occasionally.  (This can also be done in a pan on the stove, but you will have to watch it more carefully and stir it more often on the stove than in a CrockPot.)

Add sweetened condensed milk and mix well.  Add nuts (if you are using them) and stir to combine.

Pour chocolate mixture into prepared pan and smooth out with a spatula.  Place in refrigerator and let cool until set.

Turn pan upside down onto a clean work surface to remove fudge.  Peel off waxed paper.  Cut fudge into bite-sized pieces.

To give as a gift, line a tin (or another suitable container) with waxed paper and fill with fudge, separating each layer of fudge with a piece of waxed paper.
